This is the smaller version of our 28g pot of fennel pollen. Our Fennel Pollen grows wild just south of Yosemite National Park in California. It is picked and harvested in July. The pollen is collected by hand from wild fennel flowers in a similar way to Saffron. It is then sun dried on large tarps, and is screen filtered resulting in a very high quality fennel pollen. Try using Fennel pollen as a marinade - it can be rubbed into a loin of pork; simply rub your loin with oil and season well with the pollen, then rub it by hand into the meat, and leave it to marinade for 30-40 minutes. Sear your loin in a pan and finish in the oven. The fennel pollen will bring a fantastic new flavour to your pork. Try serving with a spicy red cabbage with cinnamon and clove, to compliment the fennel pollen seared pork.
